Wireless internet is my preferred option for sharing internet in our office. Is it enough to station myself away from the router since distance is inversely proportional to signal strength?

You should also position yourself away from computers that have their wireless radios turned on as they are transmitting as well.
Distance will help some with the thermal effects, but unfortunately -- distance is not really going to help for the non-thermal impact. The biological impacts are really from the non-thermal impact and if you are within an area that uses wireless, you will be impacted.
For most folks -- the real biological effect is if we are sleeping within this wireless environment; however, if you have already been impacted and have any of the symptoms associated with Membrane Sensitivity Syndrome -- then working in a wireless environment may cause an increase in severity or frequency of effects, or lessen the effectiveness of treatment.
Is there any shielding product to put over the router? I cannot remove it from my computer desk.
Not that will leave it functional and protect you. You could cover it with a metal bucket, but then it won't work as a router. There just is not an easy solution.
